As the kids are getting older, it seems we have less and less time in the evenings. Between homework and after school activities, I feel as though I am trying to squeeze in that healthy dinner too. I love any meal I can cook in the slow cooker. In fact, my slow cooker has become my best friend this year!
Healthy Quick Meals
I always try to vary our dinners throughout the week, while introducing the kids to different tastes. Even though my kids can be somewhat picky eaters, it still does not prevent me from exposing them to a variety of different foods. Being able to create healthy quick meals are a big priority of mine.
With having this love of slow cooker, I can throw everything in there early on in the day and then when it is crunch time around dinner all I have to do is serve it. I had come across a recipe to make Teriyaki Chicken in the slower cooker and felt that would be a great idea to use Minute Ready Brown Rice.
Our kids, who are not generally big rice eaters, all really enjoyed the Minute Ready to Serve Brown Rice. I was so glad they enjoyed the brown rice since it is a great natural whole grain. It is also the type of rice that still contains the highest nutritional value. This product is gluten free, MSG free and preservative free. I loved how quick this rice was to whip up. It literally takes one minute to cook – you do not even have to add any water. Just open the container, pop it in the microwave and your done.
Ingredients
- 5 Boneless-skinless chicken breasts (about 3 pounds) (thawed)
- 1 1/2 C Water
- 1/2 C Soy Sauce
- 1 t Granulated garlic
- 1 t Sesame Oil
- 3 T Corn starch, plus 4 T cold water
Instructions
- Spray the inside of your crock pot with cooking spray
- Place the 5 chicken breasts in to the crock pot.
- In a separate bowl combine 1/2 cups of water, 1 cup brown rice, 1/2 cup of soy sauce, 1 teaspoon of granulated garlic and 1 teaspoon of sesame oil. Stir and then pout it over the top of the chicken.
- Cover the crock pot and cook on high for 4 hours, or low for 7 hours.
- About 30 minutes before done cooking, remove chicken and shred it into chunks using two forks.
- In a small bowl combine the 3 T of corn starch and 4 T of cold water. Pout it into the crock pot and stir thoroughly.
- Place the chicken back into the mixture in the crock pot stir slightly so all the chicken can soak in the sauce mix.
- Cover the crock pot and let the mixture cook and thicken for 30 minutes.
- Serve over brown or white rice. *We used the Minute Ready to Serve Brown Rice!
