I was talking to my husband the other night as I filled out a school permission slip for my daughter. I was telling him that she would have winter break in a few weeks. He corrected me and said the winter break was just one week away. We went back ad forth and then I looked at the slip I was actually signing. It was to allow my daughter to get out of school early next week for the beginning of winter break. Wow! Did the time fly by that quickly? I have so much left to do! The only thing I had to buy was the marshmallow cream. I do keep this on hand but we made my White Chocolate Peppermint Crispy Rice Cereal Treats last week and used my stash.

The part of this White Chocolate Peppermint Fudge Recipe that takes the most time is letting it chill out in the fridge. While I waiting for the fudge to set, I did some gift wrapping. I was actually relaxing to make this recipe while listening to some music, wrapping gifts and drinking some peppermint hot chocolate! Once the fudge is ready to be cut, I wrap it in cellophane and tie it with a ribbon for the teacher’s gifts. It is simple, easy and make for a nice presentation. I suggest making a double batch of this so you have some for your family to eat. otherwise, they are going to eat the teacher’s gifts and you have to start all over again!

White Chocolate Peppermint Fudge Recipe

Ingredients

  • Bottom Layer:
  • 2 cups chocolate animal crackers or sandwich cookie crumbs
  • 1/2 stick salted butter, melted
  • Fudge:
  • 3 cups white chocolate chips
  • 2 tbsp butter, melted
  • 1/2 can sweetened condensed milk
  • 1/2 jar (3 oz.) marshmallow cream
  • 1 tsp. peppermint extract
  • Topping:
  • 2-3 crushed candy canes or peppermints
  • Christmas sprinkles (optional)

Instructions

  1. Line an 8x8-inch baking pan with parchment paper or foil and set aside.
  2. In a medium bowl, combine the animal crackers or cookie crumbs and 1/2 stick of melted butter. Press mixture firmly into the bottom of pan. Set aside.
  3. Place the white chocolate chips in a microwave safe bowl. In 30 second intervals, melt and stir the chips until melted and smooth. Add the 2 tbsp butter and sweetened condensed milk. Add the marshmallow creme and peppermint extract. Stir until combined. Pour the mixture over the prepared crust. Top with crushed candy canes or peppermints. Gently push over the top of the fudge to make sure the sprinkles and candy pieces are adhered to the fudge. Refrigerate 2 hours or until firm. Cut into squares to serve.
