Easy Meal Planning With eMeals & Giveaway

You may know that I am a huge fan of eMeals. This is a site that can do all your meal planning for you. You pick breakfast, lunch, or dinner…or all three! Then you get to select for many options on how you want your dinner to look. Do you prefer meals that are gluten free, kid friendly, 30-minute recipes, low carbs, low fat, clean eating, paleo diet, etc? You may get the point…there are a ton of options to choose from when selecting your categories.

The cool thing too, is that if you start on one category, say low fat, and decide you would like to change – you can go in to your meal plan and change it to whatever you choose!

I actually did not realize how much I would miss eMeals so much, until I let my membership expire. I just never seem to have enough time to plan my own meals. I to run out of time every week to actually get into the meal planning stage. Then I end up getting into stress mode in the afternoons wondering what I am going to make for dinner. I am not the “whip something up” type of person. I end up making things that are quick, processed and not all that healthy. I make excuses for a little while, but then guilt sets in.

I finally had enough and renewed my subscription. Whew, what a relief it is to have everything I need for entire week arrive in my email inbox! They not only plan all of my entrees, but my side dishes as well! It all arrives in a pdf document with a shopping list included. It cannot get much easier than that. Depending on what plan you have, you can choose your favorite grocery store, such as Whole Foods, Costco, Aldi or Walmart.

Not only does all of this make my life easier, it also makes me feel a whole lot better know I am providing good and healthy meals for my family. Oh, I did tell you, you can also choose your family size so the meals will the right proportion for you!

The meal below is one of meals I made recently for dinner called Greek Chicken Wraps. The side dish that was recommended for this meal was Quinoa with Wilted Spinach. See further down in the post for side dish recipe! 🙂

Greek Chicken Wraps

A delicious meal that takes only 30-minutes to make and is good for you! This is enough for a family of 5.
Ingredients
  • 1 1/2 C Shredded Rotisserie Chicken
  • 2 Plum Tomatoes, chopped
  • 2 Small Cucumbers, chopped
  • 1 (4-oz) Container Crumbled Feta Cheese
  • 1 1/2 T Fresh Lemon Juice
  • 1 t Dried Oregano
  • 1 1/2 T Olive Oil
  • 1/2 C Plain Hummus
  • 6 (8-inch) Flour Tortillas
Instructions
  1. Combine shredded chicken , tomatoes, cucumbers, feta cheese, lemon juice, oregano, and oil in a large bowl; toss well.
  2. Spread hummus over 1 side of tortillas.
  3. Top with chicken mixture; roll up.

The Quinoa with Wilted Spinach recipe is extremely easy to prepare, and makes a healthy side dish to the Greek Chicken Wraps. I will tell you though, that 2 cups of uncooked Quinoa makes a very large side dish. I would cut that in half the next time I make this meal. Mainly because my kids are still at that stage of being more picky. I loved it, but there is no way I could eat that much on my own!

Ingredients
  • 2 C uncooked quinoa
  • 1 (5 or 6 oz.) bag of spinach, coarsely chopped
  • 1 t salt
  • 1/4 t cayenne pepper
Instructions
  1. Cook quinoa according to package directions.
  2. Stir in spinach, salt and cayenne pepper.
