Fried Ice Cream (Helado Frito) Recipe

About a hundred years ago, I worked as a server in a popular Tex/Mex restaurant in Atlanta. I actually applied for that job because I loved Mexican food so much. I decided if I was going to work in a restaurant where I would get free food, I better choose a food I really liked! Even after working in that restaurant for almost 4 years, I could still eat Mexican food several days a week. As a matter of fact, I recently visited my daughter for a week and all we cooked was tacos, burritos, cheese dip, enchiladas and my all time favorite; Fried Ice Cream!

This was a hugely popular dessert in the restaurant and we had a small area where the servers would make the Fried Ice Cream. I will tell you, there were many mistakes during any given shift that the servers would end up eating because they were not up to the manager’s high standards. Little did he know many of those mistakes were done purposely! I have been making Fried Ice Cream for my family for many years now. I have tinkered with the recipe because you can make it many different ways. The basic recipe is the same, but the cereal you choose is completely up to you. My son loves his Fried Ice Cream made with Frosted Flakes, while my daughter prefers Cinnamon Toast Crunch. Because you are crushing the cereal, it really does not matter what flavor you choose.

We prefer to drizzle chocolate sauce and top it with whipped cream, but you can leave this step out. There is also the choice to add coconut flakes, crushed nuts or even cookie crumbs (Oreo cookies are phenomenal on Fried Ice Cream!!) Now this Fried Ice Cream dessert is a bit labor intensive. After you have made it a few times, it becomes easier and your steps can be done faster. Trust me, your kids will want you to practice making this Fried Ice Cream over and over again!

Fried Ice Cream (Helado Frito) Recipe

Fried Ice Cream (Helado Frito) Recipe


  • 1 quart vanilla ice cream
  • 1 cup crushed frosted cornflakes (or regular cornflakes or cinnamon cereal)
  • 1 cup sweetened coconut flakes, or 1 cup chopped walnuts, or 1 cup cookie crumbs (optional)
  • 2 large eggs
  • 2 tablespoons sugar
  • Vegetable oil, for frying
  • Hot chocolate sauce (optional)


  1. With an ice cream scoop, form 4 large balls of ice cream. Place on a waxed paper lined sheet and cover with plastic wrap and freeze for a minimum of 2 hours.
  2. Combine the crushed cereal crumbs with one/all/none of the coconut, walnuts or cookie crumbs and spread the mixture in a shallow dish.
  3. Dip each ice cream ball into the crumb mixture and freeze for 30 minutes.
  4. In a bowl, beat the eggs and sugar. Dip the coated ice cream balls into the eggs, then roll in the crumb mixture, coating completely. Freeze for 1 hour. You may need to repeat this step if you didn't get it completely coated the first time.
  5. Heat the oil in a large pot or fryer to 400 degrees F. Lower one ball at a time into the oil and fry until golden brown (30 seconds to 1 minute.) Remove from the oil and place in a dessert bowl. Drizzle with chocolate sauce and whipped cream (if desired) Repeat with the remaining ice cream.
