When my son was diagnosed with autism, we began to hear a lot about gluten and its ties to people with autism. We could not get away from hearing about parents who were going gluten free with their kids who were on the autism spectrum. Studies were coming out that showed the symptoms of autism had been lessened when gluten was cut out of these kids diets. People who are not on the spectrum can also have issues with gluten and can experience tummy trouble. These problems can range from bloating and gas to vomiting, cramping, migraines and dizziness. We decided to give gluten the boot and I have been experimenting with cooking gluten free foods as often as possible. The problem I have found when I bake is the food can be dense and dry. Not so with these Gluten Free Banana Nut Muffins.

I think one of the reasons these Gluten Free Banana Nut Muffins are so moist is because you are using bananas. I have also found when I bake with brown rice flour, I get better results. My kids both love bananas and I have had a lot of luck baking gluten free breads and muffins for them that comes out really light, moist and very flavorful. Granted, I have had to play around with different gluten free flours to get the right mix, but with this recipe, I hit a home run! We probably make these Gluten Free Banana Nut Muffins 2-3 times a week. The kids eat them for breakfast as well as for snacks throughout the day and into the night. Another favorite in the house is my Gluten Free Cinnamon Swirl Quick Bread. Serve that up with a cold glass of milk and you have some happy campers!


When you are making this Gluten Free Banana Nut Muffins recipe, be sure to use very ripe bananas. I found if I wait until they are almost too ripe to use, is when they are at their prime for this recipe. I think it helps with the moistness factor. Also, when you are choosing between the grapeseed or walnut oil, either one works fine, so just grab whichever s the cheapest. You may need to go to an organic food store if your local grocery store does not carry specialty oils like those. We shop at Trader Joe’s and can find just about everything we need for our gluten free recipes including the flours, oils, organic fruits and nuts. This recipe is tasty no matter what nut you use, and if you are not a nut lover or have allergies, it is just as flavorful without them. That is why this recipe is just such a crowd pleaser. I usually make one batch with and one without if we are sharing these Gluten Free Banana Nut Muffins.

Gluten Free Banana Nut Muffins


  • 3 ripe bananas, mashed
  • 2 eggs
  • ¼ cup walnut or grapeseed oil
  • 2 tablespoons honey
  • 1 1/3 cup brown rice flour
  • 2 teaspoons baking powder
  • 1-2 teaspoons ground cinnamon
  • ¼ teaspoon salt
  • ¾ cup chopped walnuts


  1. Preheat the oven to 350 degrees and lightly oil a muffin pan
  2. In a mixing bowl, mash the bananas and whisk in the eggs, oil and honey.
  3. In a separate mixing bowl, combine the brown rice flour, baking powder, cinnamon, salt and walnuts.
  4. Add the dry mixture to the wet mixture and mix until completely combined.
  5. Fill the muffin holes 2/3 of the way with batter.
  6. Bake in for 20 minutes or until inserted toothpick comes out clean
