Healthy Back To School Lunches With Bumble Bee Seafoods

Creating healthy back to school lunches can be a bit challenging. Do you like tuna? I have always been a fan of it. However, I cannot say my kids are huge fans. That is why I was actually so interested in the Bumble Bee Seafoods Back to School recipe challenge. I wanted to see if I could create a lunch recipe using tuna that my kids would enjoy.

Did you know that Tuna is available in gourmet flavors? I had no idea until I received a box of goodies from Bumble Bee. Their gourmet flavors include Albacore Tuna with Sun-Dried Tomatoes & Olive Oil, Albacore Tuna with Chipotle & Olive Oil, and Albacore Tuna with Jalapeños & Olive Oil. All three of those sound so amazing!

I go through probably at least three cans of tuna each week. I love eating tuna salad with a nice crunchy gluten-free cracker. Plus tuna fish is very high in Omega-3, which is great for lowering cholesterol. I traditionally use the Chunk Light Tuna for my salad with crackers. However, for the kids to like this meal, I had to step it up a few notches. So for the kids, I used the Albacore Tuna with Sun-Dried Tomatoes & Olive Oil.

  • 1 can Bumble Bee Tuna Sun-Dried Tomatoes & Olive Oil (drained)
  • 1 T Mayonnaise with Olive Oil
  • 1 T Red Onion – chopped
  • 2 T Raisnins
  • 1/3 C Cherry Tomatoes – quartered
  1. Combine all ingredients and serve! Add more or less of the mayonnaise, red onion, raisins and cherry tomatoes to your preference. Serve with Simple Truth 7 Ancient Grains Rice Crackers with Sea Salt.

The unique taste of the sun-dried tomatoes helped to give this healthy back to school lunch a thumbs up from Anna. I really enjoyed the taste of this gourmet flavored tuna as well!
