Homemade Mint Chocolate Ice Cream Recipe

I have a confession to make…I am an ice cream addict. Ice cream is one of the few things I have a hard time resisting. My kids are also huge fans of ice cream as well. Ice cream is our dessert every night after dinner. Because of this we always have a stash of ice cream. There have been times when we have run out and not replenished our supply, in which case the kids will just request a cookie or some other treat for their dessert.

Homemade Mint Chocolate Ice Cream

Since we do go through so much ice cream, I had started purchasing the larger buckets of ice cream at the grocery store. The amount you get for the money is way more cost effective, my only problem was that it was not hormone free. Because of this, I wanted to start making my own ice cream. Then I could use the hormone free and organic ingredients to make ice cream for our family.

This makes 4 quarts of ice cream.
  • 2 1/2 C Milk
  • 2 1/2 C Sugar
  • 1 t Salt
  • 2 1/2 C Half and Half
  • 1 1/2 t Vanilla Extract
  • 6 C Heavy Whipping Cream
  • 2 t Peppermint Extract
  • 1/2 t Green Food Coloring
  • 12 oz (2 Cups) Grated Semisweet Chocolate or Chocolate Chips
  1. Scald milk until bubbles form around edge of pan. Remove from heat.
  2. Add Sugar and Salt, then stir until dissolved.
  3. Stir in half and half, vanilla, and heavy whipping cream.
  4. Then stir in peppermint extract and green food coloring.
  5. Cover and refrigerate for 30 minutes.
  6. While the ice cream mixture is chilling above, prepare the chocolate. Using a grater, grate a block of chocolate to make the 2 cups of chocolate. Or if you prefer, measure out 2 cups of small chocolate chips.
  7. Prepare ice cream in ice cream maker as directed.
  8. Add chocolate chips/grated chocolate to ice cream after it is done in the ice cream maker.
  9. Freeze for 2 – 3 hours, and serve.

This is the second time I have used this recipe to make homemade mint chocolate ice cream. The first time I made it I used chocolate chips. Both the kids and I found the chocolate chips to be a little too large and hard to eat in the ice cream. Grating the chocolate this second time gave the ice cream just the right amount of chocolate flavor combine in the mint without being overwhelming or crunchy.

I have to tell you to that when I initially got my ice cream maker, I was not letting it go long enough with the dasher. In the instructions it said it would automatically shut off in 30 – 40 minutes. However, when it did not shut off, I shut it off on my own. After making ice cream with me shutting it off several times and it not turning out as well as I thought it should, I decided to let it go until it stopped on its own. It took 50 minutes and made a huge difference in the texture of the ice cream. It is now the perfect homemade ice cream!!
