I have to say, they turned out so good. However, once we got the first batch done…Anna was done. She was excited to get enjoy the fruits of her labor and move on to the next thing. I enjoyed the time we spent together while baking. It was a nice way to bond with Anna. I believe her love language is quality time, and cooking/baking speaks to this girl!

Within the recipe, we did take a toothpick to swirl the peanut butter and Nutella, but it didn’t swirl very well! The peanut butter is a little think and clumped, more than swirled. Either way, she was very proud of the way they turned out…and they tasted so very good! They were like Reese’s peanut butter cups in a muffin. 😋

Homemade Peanut Butter and Nutella Muffins Recipe

  • 3 cups all purpose flour
  • 3 ½ tsp baking powder
  • 3/4 tsp salt
  • 1 cup sugar and some extra for sprinkling
  • 2 eggs, room temperature
  • ½ cup oil (we used Avocado Oil)
  • 1 cup full fat milk, room temperature - we only have Skim Milk! To make it resemble full fat milk, we added 2 tbsp of melted butter to the skim milk.
  • 1 tbsp vanilla extract
  • 6 heaped tsp Nutella and some extra for decoration
  • 6 heaped tsp peanut butter and some extra for decoration

  1. Preheat your oven at 375º and line a standard muffin tin with paper liners.
  2. Sift the flour, baking powder and salt in a bowl and set aside.
  3. Beat the sugar with the oil, milk and vanilla until the sugar is dissolved.
  4. Beat the eggs in one at a time.
  5. Pour the wet ingredients in the dry ingredients and stir just enough to incorporate the flour. Soon as you lose sight of any flour streaks stop stirring. Over stirring will result in bread like muffins.
  6. Scoop about 4 tablespoons of the mixture to fill the muffin cases. The butter should be just enough for 12 regular size muffins.
  7. On each muffin spoon about ¼ tsp Nutella and ¼ tsp peanut butter and using a toothpick make swirls in the butter to create a swirled effect.
  8. Sprinkle on some sugar and bake in the oven for 20 minutes or until the muffins have lightly browned, a toothpick in the centre of a muffin comes with a couple of crumbs and if touched on top it springs back.

I am not a big baker, but since Anna enjoys it so much, it forces me to do more. I have to admit, I enjoy doing it with her much more than I do on my own! With a little bit of effort on my part to intentionally do more with her, it really does change her whole attitude. I notice she is not as grumpy and just overall much better behaved.

Is there something your kids love doing that you have to be intentional about? Do you take the time to spend one-on-one time with each child?
