Recipe for Caramel Corn – Easy and Delicious

Here is a recipe for caramel corn, that is easy, delicious and fun that you will want to keep on hand for future reference!

My husband, Rob, is a huge sports fan in general, but has a deep love for the Cubs and the Blackhawks. To say he is excited about how the Blackhawks being in the play-offs is putting it mildly. However, I think he is even more excited that our children are enjoying watching hockey with him. Every night they are playing has become a big deal in our house.

As part of the preparation to watch the game, my husband has now started to plan something special for the kids to snack on during the game. The other day while I was working on the computer he has if we have an light corn syrup. I really did not give it much thought since he was putting together a shopping list at the time and looking through some recipes.

It turns out, my husband made plans to make caramel corn for the kids. Besides ice cream, caramel corn is definitely one of my biggest weaknesses. Sunday night, a couple hours prior to game time, Rob and Megan made caramel corn for all of us. It was, and still is, absolutely delicious!

Recipe for Caramel Corn

Recipe for Caramel Corn – Easy and Delicious

Ingredients
  • 1 c butter
  • 2 c packed brown sugar
  • 1 t salt
  • 1/2 c light corn syrup
  • 1 t baking soda
  • 8 cups (1/2 c kernels) popped popcorn
Instructions
  1. Preheat oven to 200 degrees F.
  2. Over medium heat, combine first 4 ingredients and boil for 5 minutes.
  3. Remove from heat; stir in baking soda. Be careful with flair ups at this point! Stir well.
  4. Pour over the popcorn. Stir to coat well.
  5. Bake in large roaster or pan for 1 hour, stirring every 15 minutes.
  6. Spread on waxed paper to dry.
  7. Enjoy!!

A few minutes prior to the Blackhawks game, Rob put the caramel corn in bowls for the kids, laid a blanket down on the floor and got the kids set up to watch the game. During the game, Rob tends to yell very load whenever the Hawks score. It makes me jump every single time. Anna, who is no mouse herself told her dad that she would be yelling right along with him. It was a proud father moment! 🙂 Trust me, she yelled every bit as loud as he did at least for the first period…then it was bedtime!
